Title: Orange Roughy With Vegetables
Yield: 2 Servings
Ingredients
2 lb orange roughy fillets
2 tb lemon juice, divided
16 oz can stewed tomatoes, cut
1/2 ts mixed italian herbs
1 c celery; minced
1 c onion; chopped
1 c bell pepper
1 c mushrooms; sliced
1/4 ts thyme
1 pn garlic powder
1 pn hot pepper flakes
Instructions
Spray a 13x9 Pan with non stick cooking spray and sprinkle with 1
tbls. of Lemon Juice. Arrange fish in a single layer and sprinkle
with 1 tbls. Lemon Juice. Combine remaining ingredients and spoon
over fish. Bake uncovered in a 350 Degrees oven for 25-30 Minutes,
until Fish flakes and sauce is thick.
Serves 4: Each serving Counts 4 proteins, 2 vegetables.
