4 ea chiles gueros
1 ea tomato, peeled & seeded
6 ea sprigs cilantro, chopped
1 ea small onion, chopped
1 ea clove garlic, crushed
1 ea canned serrano, chopped
3 tb oil
1 ea salt, pepper to taste
1 ea pinch sugar
Instructions
Simmer gueros in boiling water for 5 minutes. Drain, stem and seed.
Puree with remaining ingredients. Cook in skillet, stirring
constantly, 2-3 minutes. Makes 1
