Title: Steak & Onion Salad
Yield: 4 Servings
Ingredients
1 lb flank steak
1 1/4 ts salt
1/4 ts ground black pepper
4 c leaf lettuce; in pieces
1 md onion; thinly sliced (2 c)
2 c cucumber; thinly sliced
1 c sweet red bell pepper;
-sliced
1/4 c olive oil
3 tb lime juice
1/4 c fresh dill; chopped
Instructions
Preheat broiler. Season steak with 1/4 tsp of the salt and 1/8
teaspoon of the ground black pepper.
Broil 1 to 2 inches from the heat until desired doneness (3 to 4
minutes per side for medium-rare).
Cut into thin slices; cool slightly. Place in a large salad bowl with
lettuce, onions, cucumber and red pepper, set aside. In a cup, combine
olive oil, lime juice, dill and remaining 1 teaspoon salt and 1/8
teaspoon black pepper; pour over salad; serve immediately.
