Cocoa Banana Muffins
Yield: 12 Servings
Ingredients
1 c flour
2 ts baking powder
1/2 ts salt
2 tb cocoa
1/3 c sugar
1 1/2 c kelloggs all-bran
3/4 c milk
1 egg
2 tb vegetable oil
1 cu bananas; mashed
Instructions
Preheat oven to 400. Line 12 muffin cups or spram with Pam. In medium
bowl, stir together flour, baking powder, salt, cocoa and sugar.
Combine cereal and milk in a large mixing bowl and let stand for 2
minutes or until cereal softens. Add egg and oil to cereal. Beat well
and stir in banana. Add flour mixture, stirring only until combined
and evenly moist. Spoon batter into prepared muffin cups. Bake for 25
minutes or until muffins are lightly browned.
