Title: Prosciutto Ham And Mushroom Risotto

Ingredients

     25 g  butter; (1oz)
      1 tb oil
      1    onion; finely chopped
      1    clove garlic; crushed
    250 g  risotto rice; (8oz)
    450 ml vegetable stock; (3/4 pint)
    150 ml white wine; (1/4 pint)
    175 g  button mushrooms; sliced
           -(6oz)
      1    red pepper; finely diced
    125 g  prosciutto ham; finely
           -sliced (4oz)
      2 tb lemon juice
      2 tb single cream
      1    salt and freshly ground
           -black peppe; r

Instructions

1. Melt the butter and oil in a large pan, gently fry the onion and
garlic for 2-3 minutes.

2. Stir in the rice and cook for 1 minute, then add the stock and wine.
Bring to the boil, cover and simmer gently for 20 minutes, stirring
occasionally until the rice is tender and liquid has been absorbed.

3. Add the mushrooms, pepper, ham, lemon juice, cream and seasoning to
taste. Cook for 1-2 minutes then serve immediately.
