Rice And Black Bean Dressing
Yield: 1 Serving
Ingredients
2 tb Olive oil
1 c Chopped onions
1/2 c Celery
1/2 lb Lean ground pork
2 tb Chopped garlic
1 ts Cumin
2 tb Finely-chopped parsley
2 c Cooked black beans
2 c Cooked white rice
Juice of 2 oranges
Salt; to taste
Freshly-ground black pepper;
- to taste
Instructions
In a large saute pan, heat the olive oil. When the oil is hot, add the
onions and celery. Season with salt and pepper. Saute the vegetables for
2 minutes. Add the ground pork and continue to saute for 3 to 4 minutes.
Stir in the garlic, cumin, and parsley. Continue to saute for 1 minute.
Remove from the heat and turn into a mixing bowl. Stir in the beans and
rice. Season with salt and pepper. Moisten the stuffing with the juice of
2 oranges.
This recipe yields about 7 to 8 cups of stuffing.
