2 eggs
1 1/3 c flour
3 tb sugar
1 1/2 ts baking powder
1 ts cinnamon
1/4 c apple cider
6 md apples; peeled, cored and
shredded
Instructions
Preheat oven to 400 degrees.
In large bowl, lightly beat eggs. Add the flour, sugar, baking powder,
cinnamon, and apple cider. Mix well . Shred apples and add to batter.
Fill muffin pan with mixture. Bake until just under done, testing with
toothpick or fork. Finish by broiling for a few minutes to brown tops.
Serve warm.
Approximately 5 minutes.
