Title: Classic Scrambled Eggs
Yield: 1 Serving

Ingredients

      9    eggs
    1/4 c  sour cream
      2 tb unsalted butter
           Salt and white pepper
    1/4 c  chopped dill
      4 oz smoked salmon; diced
           Fresh dill sprigs

Instructions

Bring water to boil in bottom of double boiler. In top stir in eggs, sour
cream and unsalted butter. Beat lightly to break up eggs. Turn heat down
and over simmering water, stir eggs constantly until very lightly set, but
still creamy about 8 minutes. Stir in salt and white pepper to taste.
Add dill and smoked salmon. Mix well. Eggs will be creamy looking.
Serve immediately with dill sprigs if you like.
