Ingredients
***MELON BERRY SOUP***
1 c strawberries
2 chilled melons
Lime juice
Nutmeg
Plain yogurt
Mint leaves
***TROPICAL FRUIT SOUP***
1 cantaloupe
1 mango
1 orange
1/2 c chunked pineapple
Orange zest
Lemon zest
Instructions
Melon Berry Soup: Halve & seed melons. Scoop out fruit. Reserve shells.
Slice off bottom of each shell so it sits flat. Put melon & 1 cup berries
into food processor. Puree until smooth. Season with lime juice &
nutmeg. Pour into melon shells or bowls to serve. Garnish with a swirl
or yogurt & mint leaves. Approximately 5-7 minutes. Tropical Fruit Soup:
In food processor, puree melon, mango, orange, pineapple, orange and lemon
zest until smooth. Serve in mugs, melon bowls, or soup plates.
Approximately 5-7 minutes.
Per serving (excluding unknown items): 275 Calories; 2g Fat (5% calories
from fat); 5g Protein; 68g Carbohydrate; 0mg Cholesterol; 29mg Sodium
