Title: Grilled Marinated Chicken W Grilled Pepper & Olive Relish
Yield: 4 Servings

Ingredients

      2    whole Chickens; quartered
      1 c  Grilled Pepper And Black
           -Olive Reli; see * Note
           === GARLIC AND FRESH OREGANO
           - MARINA
    1/4 c  Olive oil
    1/2 c  Coarsely chopped garlic
    1/2 c  Coarsely chopped fresh
           -oregano leav
      1 tb Sherry vinegar
      2 tb Lime juice
      1 tb Honey
      2 ts Ancho powder

Instructions

* Note: See the "Grilled Pepper And Black Olive Relish" recipe which is
included in this collection.

Combine all of the marinade ingredients in a mixing bowl. Mix until
thoroughly combined. Marinate the chicken for 1 hour.
Prepare a wood or charcoal grill and let it burn down to embers.
Grill chicken for 4 minutes on each side or until done. Serve with
the Grilled Pepper And Black Olive Relish spooned over it.
This recipe yields 4 servings.
