Title: Grilled Marinated Turkey With Corn & Grilled Pepper Relish
Yield: 6 Servings

Ingredients

      6    Boneless skinless turkey
           -breast hal
      1 c  Corn And Grilled Pepper
           -Relish; see * Note
           === GINGER-GARLIC MARINADE
           -===
      1 c  Soy sauce (preferably low
           -sodium)
    1/2 c  Coarsely chopped fresh
           -ginger
    1/2 c  Coarsely chopped garlic
    1/4 c  Fresh lime juice
    1/4 c  Honey

Instructions

* Note: See the "Corn And Grilled Pepper Relish" recipe which is included
in this collection.

Combine all the marinade ingredients in a small saucepan and bring to a
boil. Remove from heat and refrigerate until cool. Add the turkey breasts
tothe marinade and let marinate, refrigerated and covered, for 8 hours or
overnight.
Prepare a wood or charcoal fire and let it burn down to embers.
Remove turkey breasts from the marinade and pat dry, discarding the
marinade. Grill the turkey for about 4 minutes on each side. Serve
immediately, with the Corn And Grilled Pepper Relish spooned over.
This recipe yields 6 servings.
