Title: Ginger Crisps
Yield: 40 Servings

Ingredients

    1/2 c  butter or margarine; not
           -spread; softened
    1/2 c  solid vegetable shortening
    2/3 c  granulated sugar
    1/3 c  packed light brown sugar
      1 lg egg
      1 tb finely chopped crystallized
           -ginger
      1 tb ground ginger
      1 ts baking soda
      1 ts vanilla extract
  2 1/4 c  flour
    1/3 c  granulated sugar
    1/3 c  chopped crystallized ginger

Instructions

1. Heat oven to 375øF. and lightly grease 1 or 2 cookie sheets.

2. Dough: In a large bowl with mixer on medium speed, beat but and
shortening until creamy. Beat in sugars until pale and fluffy. Add
remaining ingredients except flour and the 1/3 cups of granulated sugar and
crystallized ginger and beat until blended. With mixer on low speed, beat
in flour just until blended.

3. Roll level measuring tablespoons dough into 1 1/4" balls. Roll balls
in
the 1/3 cup sugar, then flatten with bottom of a glass into 2" rounds. Top
each with 1/2 teaspoon crystallized ginger.

4. Bake 7-8 minutes until edges are lightly browned. Cool on cookie sheet
5 minutes before removing to a wire rack to cool completely.
