Title: Camarones Al Mojo De Ajo (Garlic Shrimp) - T/L
Yield: 1 Serving

Ingredients

     36 md shrimp in their shells
      3    whole garlic cloves
     12    garlic cloves; minced
    3/4 ts salt
    3/4 ts fresh ground black pepper
    3/4 ts white vinegar
      3 tb olive oil
      5 tb butter
      3 tb lime juice

Instructions

From the underside, split the shrimp down the middle without separating
them
completely. Remove the dark vein if apparent.

In a blender, puree the whole garlic cloves, salt, pepper, and vinegar.
Marinate the shrimp in this mixture for 30 minutes.

Heat the oil and butter in a skillet. Add the minced garlic and saute until
golden brown, about 3 minutes. Add the shrimp with the shells side up.
Lower
the heat, cover and cook for 2-3 minutes or until the shrimp are opaque.
Sprinkle with the lime juice and remove from the heat.

Serves 6.

NOTE" Garlic is seldom used in prodigious amounts in Mexican cooking, but
in
this popular shrimp dish it provides a perfect balance of flavors. Rice is
a
natural accompaniment."
