Title: Five-Alarm Chipotle Steak
Yield: 8 Servings

Ingredients

    1/2 c  red wine vinegar
      2 tb olive oil
      3    garlic cloves, minced
      2    chipotle peppers in adobo
           -sauce
      1    2 lb. flank steak

Instructions

Whisk vinegar, oil, garlic and chipotle peppers together in a shallow
dish just large enough to hold steak, crushing peppers until fairly
smooth. Pierce steaks all over with a fork. Place in marinade,
turning to coat. Marinate covered and refrigerated at least 4 hours
or overnight. Remove steak from marinade and pat dry. Boil marinade
in a small saucepan for a couple of minutes, until thickened
slightly; set aside. Preheat barbecue to medium-high and grease
grill. Grill steak for 4 to 5 minutes a side (flank steak is best
served rare or medium-rare.) Remove from barbecue and let stand on a
cutting board about 5 minutes. Slice across the grain into thin
strips. Serve with thickened sauce. Note: Tins of chipotle peppers
in adobo sauce can be found in the Mexican section of supermarkets.
If necessary, substitute two finely chopped jalapenos. Yield: 8
