Title: Maple Mustard Glazed Grilled Salmon
Yield: 4 Servings

Ingredients

    1/2 c  Pure Maple Syrup
      3    Tbsp. cider Vinegar
      1    Tbsp. brown Mustard
      1    Tbsp. soy sauce
      1    Tbsp. vegetable oil
      1    clove garlic; finely chopped
    1/2    tsp. freshly ground black
           -pepper
      4    thick salmon steaks; (1
           -inch) about 6
           oz. each

Instructions

In a small bowl, whisk together syrup, vinegar, mustard, soy sauce,
vegetable oil, garlic and pepper.

Put salmon steaks in a shallow dish in a single layer and add the maple
marinade, turning to coat. Cover with plastic wrap and refrigerate for
about 1 hour, turning once.

Prepare grill. Remove the salmon steaks to a plate, shaking off excess
marinade. Transfer the marinade to a medium-sized saucepan and bring to a
boil; reduce heat to low and simmer, stirring occasionally, until the
marinade is thick and has reduced to 1/4 cup, about 5 minutes. (if the
glaze gets too thick, thin it with a little water.)

Oil the grill rack. Brush one side of the salmon with the maple glaze and
grill, with the glazed size toward the heat, for about 5 minutes. Brush
the unglazed side and turn the fish over. Grill for about 5 more minutes,
or until the fish is cooked in the center.
