Title: Black Beans Cuban Style

Ingredients
1/2 lb dried black beans
1 md onion; finely chopped
1/2 sm green pepper; finely chopped
5 cloves garlic; pressed

1 pn oregano
1/2 ts ground cumin
2 bay leaves
1 spoonful dijon; (or other
1 ; strong-flavoured)
1 ; mustard
1 tb dark; strong-flavored
1 ; vinegar
1 red wine; to taste
1/4 c red pimento; finely chopped
1 ds red; (cayenne) pepper
1 sea salt; to taste
1 veg bouillon cube
1 piece kombu sea vegetable;
-(optional, some say)
1 ; (1-inch)
Instructions
Wash and soak the beans overnight in water to cover. The next day, saute
the
onion and green pepper until soft. Add black beans, along with soaking
water.
Add remaining ingredients, stir well, cover, and cook until beans are soft.
Serve over rice with chopped onions on top.
