Carla's turkey recipe regarding cooking with breast down is right. We
always
cook our turkey breast down until the last 30-45 minutes when we turn it
for
browning.

We also stuff the turkey with fruit. We soak mixed dried fruits in wine
to
cover until they absorb all the liquid (usually a couple of hours), then
stuff in cavity along with a chopped onion, a couple of chopped garlic
cloves, chopped carrot, and a couple of chopped fresh apples (unpeeled).

We *tent* the turkey with heavy duty foil, put it in the
oven
about 4:00 a.m. and don't touch it for several hours up>.

I'm sure the results are similar to the apple juice, as the drippings are
wonderful,
and the moist, succulent breast meat is to die for!
